INGREDIENTS
BAKING METHOD
PLACE all the ingredients in a mixing bowl
USE spiral mixer
MIX on the slow speed for 4mins and then on high speed for 5mins
DOUGH temperature should be 24ºC to 26ºC
BULK fermentation for 30mins
SCALE the dough 320gm. No intermediate proofing required
FINAL proof for 40mins under 75% humidity and temperature of 32ºC
BAKE at 230ºC under the falling temperature 200ºC for 35-40mins.
